Given that a lot of us are now being forced to spend more time indoors, it's a good idea to make use of the time by trying new things - including one of the most important things to all gym members - food!
Given the chaos that appears to be surrounding the supermarkets in the wake of the coronavirus, we've created a simple vegan curry using ingredients that are still readily available in most supermarkets.
Ingredients:
1 Tin of chopped tomatoes
1 Tin Of Chickpeas
1 large red onion
250g of mushrooms
3 Large red peppers
3 cloves of finely chopped garlic
1 tbsp curry powder
1 tbsp oil
1 tsp paprika powder
200ml of coconut Milk
200ml water
Method:
Gently fry the oil, onion and garlic in a large pan for 5-10 minutes until softened
Finely chop the mushrooms and peppers then add to the pan. Fry for a further 5-10 minutes
Add the curry powder, paprika, and tinned tomatoes
Drain the chickpeas then add to the pan along with the coconut milk and water
Allow to simmer on a medium heat for 20 minutes
Serve with a side of your choice (rice, naan bread etc).
